How wonderful to hear from you! The girls and I were so excited to hear from someone in France.  We love cooking, in fact I have been wanting to learn to make cassoulet.  We make a lot of bean dishes and I thought that this would be a good one to add to my repertoire.

My 14 year old daughter Rachel's passion is baking, and she is sitting here beside me begging for French pastry recipes.  

We are originally from Louisiana, living in South Louisiana for 15 years.  We were surrounded by wonderful Cajun cooking during that time. Though the Acadians were French by heritage, I'm not sure that much of their food had it's roots in classic French cuisine, I believe most of it was borne out of necessity, and what was available locally.
